GGACHI kimchi is a handmade, small-batch kimchi brand based in Rotterdam. We follow time-honoured Korean fermentation methods, using simple ingredients and no shortcuts. Every jar reflects the rhythm of slow food: layered, alive, and always evolving.

Founded by a group of friends with backgrounds in design, food, and fermentation, GGACHI grew from a shared interest in food culture into a long-term practice. Drawing from Korean culinary knowledge and Dutch advances in food sustainability and technology, we aim to make fermentation accessible — without flattening its complexity. We’re based at Robin Foodhub, a space for local food innovation, where we produce, teach, and experiment as part of a wider community of makers.

From product to practice.
Our work doesn’t stop at the jar. We offer fermentation kits and hands-on workshops that invite people to learn through doing - connecting people with the histories, techniques, and flavours of kimchi. The Three GGACHI.
We make three core variations: traditional, spicy, and vegan. All are slow-fermented, bold in flavour, and designed to sit proudly in both Korean and everyday kitchens — with rice, noodles, sandwiches, or whatever you’ve got in the fridge.
